Italian Recipes for Side Dishes - Contorni

The contorno - a side dish in English, plat d'accompagnement in French, is a course of raw or cooked vegetables, potatoes, mushrooms or aubergines, or legumes such as beans, peas, lentils, chickpeas, to accompany the second course of meat, fish or eggs.
Sometimes the contorno is served in the same dish as the secondo, other times on a separate, smaller dish. Especially if raw, it is high in dietary fiber, vitamins and minerals and is supposed to balance a carbohydrate-rich first course and a protein-based second course.
